1 medium eggplant
olive oil
8 oz. can Italian tomato sauce
6 oz. grated mozzarella cheese

Directions:
Directions:
1. Slice eggplant (peel if desired) in 1/4 inch slices. Brush very lightly with oil.

2. Bake on non-stick cookie sheet in 400º oven. Turn once when brown.

3. Cover the bottom of a baking dish with a small amount of sauce. Alternate layers of baked eggplant, sauce and cheese.

4. Bake at 350º for 1/2 hour.
