1 1/4 cup wheat germ
3 cups of flour
3 teasp. Baking Powder
1 teasp. salt
2 teasp. cinnamon
1 cup chopped nuts

2 eggs
1 3/4 cup sugar
2 teasp. vanilla
2/3 cup cooking oil
3 cups grated zuccini

Directions:
Directions:
In a bowl, mix together first 6 ingredients. In a second bowl, beat eggs until fluffy then beat in sugar, then vanilla and then oil. Stir in zuccini. Slowly stir in ingredients from first bowl.

Pour into two greased and floured bread tins.

Bake at 350 degrees for 1 hour until a pick inserted comes out clean.. Glass pans should be baked at 325 degrees.

Cool 10 minutes, remove and cool on rack.
