4 Tbsp olive oil or bacon grease
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 lb fresh or frozen sliced okra
1 Tbsp all purpose flour
14.5 oz can petite diced tomatoes, undrained
1 tsp kosher salt
1 tsp Creole seasoning, or more to taste
6 oz can V8 juice

Directions:
Directions:
In a 10 inch skillet, saute the onions and green peppers in the bacon grease until soft.

Add the okra and saute for 8-10 minutes, stirring occasionally.

Sprinkle the flour over the okra and stir to blend.

Stir in the tomatoes salt, pepper and Creole seasoning. Bring to a boil, then cover and reduce to simmer. Simmer for 10-15 minutes.

Add V8 juice until sauce is the desired consistency.
