2 (20-oz.) cans chunk pineapple in juice
3/4 c. sugar
2 T. flour
1 c. Velveeta cheese
1 c. graham cracker crumbs
3 T. butter or margarine

Directions:
Directions:
Drain pineapple and reserve juice from one can. Layer pineapple in a greased casserole. In a food processor* mix sugar and flour. Add juice from one can of pineapple; process briefly to mix with dry ingredients. Cut Velveeta into chunks, add to the sauce and process until cheese is small, uniform particles. Pour sauce over pineapple chunks. Top with graham cracker crumbs and dot with butter. Bake at 350º, 45 min. or until sauce is bubbly and topping is golden.
*To prepare without a food processor, mix sauce ingredients by hand and grate Velveeta before adding.

This is an unusual side dish that is especially good with baked ham or turkey. Christmas dinner at the Gene Limback household wouldn't be complete without it!
