1/2 cup trans-free margarine
1 package (13.9 ounces) quick bread mix (any flavor)
1 egg
1/4 cup granulated sugar

Directions:
Directions:
1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2. In a large microwaveable bowl, melt the margarine. Add the quick bread mix and egg. Mix well. Place the sugar in a small bowl.
3. Scoop out 1" balls of the dough and roll them quickly in the sugar. Place the dough balls 2" apart on the prepared baking sheet. Use a fork to flatten each ball, making a crisscross pattern on the tops.
4. Bake for 10 minutes. Let the cookies cool for 2 to 3 minutes on the cookie sheet before transferring them to a rack to cool completely.
