1 Tbsp olive oil
1/2 cup chopped onion
1 large leek, white and pale green parts, chopped
1 large clove garlic, chopped
1/2 bay leaf
3 cups butternut squash cut into 1 inch pieces
1 medium Granny Smith apple, cut in 1 inch pieces
2 cups chicken broth
1/2 cup water plus additional for thinning soup
2 Tbsp sour cream or creme fraiche

In a heavy saucepan cook the onion, leek, garlic and bay leaf with salt and pepper in the olive oil over moderate heat, stirring often.

Add squash, apple, broth and 1/2 cup water. Simmer mixture, covered, until squash is very tender, about 15 minutes. Discard bay leaf.

In a blender, puree mixture in batches, transferring puree to a clean saucepan, adding some water if necessary to reach desired consistency.

Whisk in sour cream or creme fraiche. Season with salt and pepper as needed.
