2 1/2 cups fresh fruit juice and water
4 tbls. minute tapioca
1/2 cup sugar
1 1/2 cups diced apricot's or peaches
2 tbls. lemon juice

Directions:
Directions:
Combine fruit juice and water, minute tapioca, sugar and salt in sauce pan and mix well. Bring mixture quickly to a full boil over direct heat stirring constantly. Remove from heat. (Mixture will be thin. Do not over cook). Add fruit and lemon juice. Cool stirring occasionally. Mixture thickens as it cools. Chill. Serve in sherbet glasses with plain or whipped cream.
