4 C Chicken Broth
2 C of Beef Broth (if you have it)
28 oz can Crushed or Stewed Tomatoes
left over cooked vegetables
2 Carrots diced
Cabbage or Kale sliced in 1-2 inch pieces
1 T Chili Powder
1/2 T Cumin

Corn Chips with Lime
Sour Cream

Directions:
Directions:
Combine all ingredients. Bring to a boil then simmer 20 mins. Turn heat off and let sit 10-20 mins. Ladle into bowl and top with broken corn chips and a scoop of sour cream.

Use sliced leeks, cubed parsnips, chopped green pepper, cabbage, corn, broccoli or whatever vegetables you have on hand.
