2 cans stewed tomatoes with green peppers and onions (29 oz total)
1/2 cup sugar
4 Tbsp butter
1 Tbsp vanilla extract
1 box pie shells

Directions:
Directions:
Preheat oven to 350º
Combine tomatoes, sugar, butter, and vanilla. Simmer over low hat until thickened, about an hour or more.
Arrange pastry shell in pie plate, pour tomato mixture in shell. Cut remaining pie shell into strips and arrange over the top of the pie. Use all of top shell, multiple layers if needed. Bake for about 40 minutes.
