"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3/4 c. light corn syrup
2 1/2 c. dry macaroon coconut
Summer coating, melted

Directions:
Directions:
In small pan, heat corn syrup to quite hot, but do not boil. Pour into bowl containing the coconut and thoroughly mix with a spoon or hands. Set aside. After one hour, squeeze a small amount of the saturated coconut together, then roll into a ball 3/4 inch in diameter (rolling is easier if hands are kept wet). Place balls on waxed paper; air drying one to two hours will make hand dipping easier. Melt coating in double boiler, then use fork to dip candy in coating and tap fork on side of pan to remove excess coating. Chill dipped candy on wax paper.

Personal Notes:
Personal Notes:
Use chocolate, white, pink, yellow, or green summer coating. Use toasted coconut in place of macaroon coconut. Use flavored summer coating.
