1/4 tsp. salt
4 c. zucchini (shredded)
4 oz. (1 c. shredded) mozzarella
4 oz. (1 c. shredded) cheddar
1/2 c. grated Romano cheese
2 eggs, beaten
1 lb. ground turkey or turkey sausage
1 small onion, chopped
1/2 qt. spaghetti sauce
1/4 tsp. oregano
1 mild green pepper, diced
10 oz. fresh mushrooms, sliced

Preheat oven to 400º. Grease a 13"x 9" inch glass baking dish or pan. Sprinkle salt on zucchini in a small bowl and let stand for 10 minutes. Squeeze dry with a paper towel. Wipe out the bowl and return zucchini. Mix in 1/2 c. mozzarella, 1/2 c. cheddar, Romano cheese and the eggs. Press the mixture evenly into the bottom of the pan. Bake for 20 minutes until set.

Brown ground turkey with the onion in a skillet. Drain off any fat. Add spaghetti sauce and seasonings. Bring to a boil. Spoon sauce mixture over zucchini crust. Sprinkle with green peppers, mushrooms and the remaining cheeses. Bake for 25 to 30 minutes.
