4 cups chicken or vegetable broth
2 tablespoons olive oil
1 fennel bulb, thinly sliced
2 garlic cloves, minced
1 cup arborio rice
4 ounces soft goat cheese
1 cup fresh or frozen peas, thawed and
1 tomato, seeded and chopped
2 tablespoons chopped fresh mint or basil


4 tazas caldo de pollo o vegetale
2 cucharadas aceite de olivo
1 bulbo de hinojo, rebando
2 dientes de ajo, en pedacitos
1 taza arroz arborio
4 onzas queso de cabra suavecito
1 taza chicharros-frescos o congelados (deshelados)
1 jitomate-desemillado y cortado en pedazos
2 cucharadas menthe fresca o albahaca.

Directions:
Bring the broth to a boil in a large saucepan over medium heat. Add the fennel, garlic, and rice. Cook for 5 min., or until the rice is golden brown. Begin adding the simmering broth, half a cup in a time, and cook, stirring constantly for about 20 min. When done, the risotto will become creamy and the rice slightly firm. Stir in the cheese, peas, tomato, and mint or basil. Cook for 2 min. and serve.


Calienta el caldo en una olla grande sobre calor mediano hasta que hireve. Baja la temperatura abajo, cubierta y matiene hervir a fuego lento.
Caliente el aceite en una cacerola grande hasta calor mediano. Anade el fennel, ajo y arroz. Cocina por 5 minutos o hasta que este dorado el arroz.
Anade 1/2 taza del caldo a la vez continue concinando y mezclando por 20 minutos. Cuando lista, el arroz sera cremosa y el arroz poco duro. Anade el queso, los chicarros, el jitomate y la menthe o la albahaca. Cocina por 2 minutos mas y sirve!
