3/4 c. sugar
2 1/2 TBSP. flour
1/4 tsp. salt
2 c. WHOLE milk
3 eggs, separated
1 tsp. vanilla
1 box Nilla Wafers
4 healthy bananas (over ripes are good for this)

Directions:
Directions:
Combine 1/2 c. sugar, flour & salt in a pan over medium heat. Stir in milk - tur down to medium low. Heat until thoroughly warm. Beat egg yolks. Stir several spoonfuls of milk mixture in to the eggs, stirring constantly (to keep eggs from cooking), then pour eggs into pudding mixture. Stir until thickens. Remove from heat - add vanilla.

In a square pan (about 8x8), Layer cookies, bananas, pudding - repeat ending with pudding.

Topping:

Beat egg whites until medium(when you pull beaters out they should make a peak that stands for a second) Gradually add the remaining 1/4 c. sugar. Beat until stiff peaks. Pile on top of pudding.

Bake at 425 degrees until golden brown (WATCH CLOSELY).
