2 lbs squash, sliced
1 stick butter
salt & pepper to taste
1 med. onion, grated
1 lg carrot, grated
1 can cream of chicken soup
1/2 soup can of water
1/2 pt. sour cream
3/4 to 1 cup grated Cheddar cheese
1 (8 oz.) pkg. Peperidge Farm stuffing mix

Directions:
Directions:
1) Cook squash and onion together in water for about 7 minutes or until tender. Drain well.
2) While squash is cooking, mix liquid ingredients. Pour soup, water and sour cream into a large bowl. Add salt and pepper, and carrot.
3) Get Pepperidge Farms stuffing mix ready. Melt butter and pour over stuffing mix, using a fork to fluff.
4) Mix drained squash/onion with the liquid ingredients. Toss gently to coat evenly.
5) Place a layer of stuffing mix in the bottom of Pyrex dish. Layer squash mixture next and repeat until all is used, ending with stuffing mixture.
Bake at 350 degrees for 30 minutes. Five miutes before casserole gets done, add cheese to top of casserole if desired.
