Sorta Grandma's Risotto Recipe

Ingredients: 5+ c chicken stock 2 medium onions finely chopped 2 cloves garlic chopped 1 pinch saffron 14 oz arborio rice 1 c dry white wine (or vermouth) 6 tbsp butter 4 oz freshly grated Parmesan cheese 2 heaping tbsp mascarpone cheese (optional)

Directions:1. Heat Stock to gentle simmer
2. Melt 1 tbsp butter over medium heat and add onion for 6-8 minutes. Add saffron, and garlic. Cook while stirring for 30 seconds
3. Turn heat to medium-high and add rice constantly stirring. After 1 minute it will begin to be slightly translucent. Add wine and keep stirring till fragrant and harsh alcohol flavors evaporate.
4. Once wine has cooked into rice add one ladle of hot stock. Season with salt. Turn heat down to medium and stir so rice on outside doesn't cook to quickly. Keep adding one adleful of stock, stirring with each addition while allowing each ladleful to be absorbed before adding the next. Continue to add until rice is soft but with a slight bite.
5. Remove from heat and stir in remaining butter and Parmesan. Place lid on the pan and allow to sit for 2-3 minutes.
6. Serve immediately with dollop of Mascarpone |
