Creme Brulee Recipe

4 egg yolks
1/4 cup granulated sugar
1 & 1/2 cups heavy cream
3/4 tsp vanilla extract or one whole Vanilla bean
Pinch of salt
Additional sugar for torching the tops

***for vanilla bean (cut the bean pod and scrap out the beans, mix into the batter)

1. Preheat oven to 300 degrees
2. In a mixer, beat egg yolks on high and add sugar and vanilla. Continue to beat at high speed for about 3 minutes
3. Stop the mixer and add the heavy cream (add vanilla beans at this point also)
4. Combine the mixture gently and add the salt. Make sure ingredients are fully incorporated, without forming too many bubbles
5. Strain the mixture once and divide the batter evenly into ramekins
6. Create a water bath for the ramekins by placing them in a baking disk and filling with warm water half way up the sides of the ramekins
7. Bake for 25-30 minutes, making sure the tops do not brown too much
8. Remove from oven and allow ramekins to cool in the water bath until they're cool enough to touch
9. Wrap with plastic wrap and cool in refrigerator overnight (or for 3 to 4 hours)
10. Dust each ramekin with about 1 tsp of granulated sugar and shake it to make sure you have an even layer.
11. Use a torch to brown the sugar by making small, continuous circular motions about an inch away from the ramekin.
12. Serve immediately or Place in the fridge until ready to serve and garnish with berries.
