Cabbage (I've sliced whole heads by hand, but it is easier with one of those pre-cut slaw packs)
One hand full cilantro,diced
Lime juice from two limes (or just use the stuff from the bottle)
One or twoJalapeno or Serrano peppers julienned
Three table spoons vinegar (apple cider or white wine)
Two tbsp olive oil
Salt to taste
a pinch of sugar

Mix all of the ingredients in a bowl and I like for it to sit for at least an hour, stirring frequently. The longer it sits for the better it tastes.

I have never written this recipe down, so please bear with me. It is really good on fish tacos or even pork pastor tacos. I guess it could be eaten on its own as well. If you don't like spice, then leave out the peppers.
