2 Tbsp tarragon vinegar
1 Tbsp water
2 egg yolks
4 Tbsp butter (softened)
salt and white pepper to taste

Directions:
Directions:
1. Gently boil the vinegar and water in a small saucepan; reduce by half and set aside until cool.
2. In a double saucepan or bowl, over a pan of gently simmering water, whisk the egg yolks and reduced vinegar until the mixture is thick and fluffy.
3. Gradually add the butter a tiny piece at a time; whisk briskly until each piece has been absorbed by the sauce.
4. Continue adding butter until the sauce has the consistency of mayonnaise.
5. Season with salt and pepper to taste.
(If sauce is too sharp add a little more butter. It should be warm rather than hot when served.)
