Ingredients:  
2 cups cooked and diced potatoes (3 medium or 2 large)
2 cans cream of potato soup
2 cups sharp grated cheddar cheese
Salt and pepper to taste

Topping
1 package Ritz crackers, crushed with hands
1 stick melted butter
1/4 cup green onions chopped
2 tsp parsley flakes

Directions:
Directions:
Preheat oven to 425º.
Combine potatoes, soup, cheese, salt & pepper. Stir well.
Pour into 3 or 4 qt baking dish.
Combine topping ingredients; mix & pour over potatoes.
Bake 20 to 25 minutes.
