4 eggs, separated
1/4 cup flour
1 quart rich milk
3/4 cup sugar
1/8 tsp. vanilla

Directions:
Directions:
Whisk egg yolks. Combine flour and 1/2 cup milk, mix well. Whisk flour and milk into eggs yolks. Add another 1/2 cup milk and mix to make paste. Add sugar and salt to the rest of the milk and scald. Stir milk into egg mixture and return to saucepan. Cool slowly, stirring constantly until mixture becomes thick, about 30 min. (Can be done in a double boiler) Remove from heat, stir in vanilla and let cool. Beat egg whites until they are stiff but not dry. Fold into the cooled custard. Chill before serving. Garnish with nutmeg and cinnamon if desired.
