2 Tbsp soy sauce
2 Tbsp Chinese white rice wine or gin
1 Tbsp oyster sauce
2 tsp granulated sugar
2 tsp toasted sesame oil
3/4 tsp salt
white pepper to taste
3 large eggs
3 Tbsp vegetable oil
1 1/2 Tbsp minced fresh ginger
1 1/2 Tbsp minced garlic
1 1/2 cups frozen peas and carrots
3 cups cooked white rice
2 scallions, finely sliced

Directions:

In a small bowl, mix soy sauce, rice wine or gin, oyster sauce, sugar, sesame oil, 1/2 tsp salt and a pinch of white pepper.

In another bowl, beat the eggs with 1/4 tsp salt and a pinch of white pepper.

Heat a large wok or skillet over high heat. Swirl in 1 Tbsp vegetable oil. Add eggs and scramble until barely set. Remove to small bowl, cutting the eggs into small pieces.

Heat pan over medium-high heat. Add remaining 2 Tbsp oil. Add the peas and carrots and cook, stirring frequently about 4 minutes. Add garlic and ginger and cook another 2 -3 minutes - do not allow it to brown. Add sauce mixture and then the rice. Gently stir until sauce is evenly distributed. Remove from heat.

Stir in sliced scallions.
