1-1/2 C. buttter, softened
2 C. sugar
1 T. grated orange peel
2 tsp. vanilla
3-1/4 C. flour
1 tsp. baking powder
1/2 tsp. salt
1-1/2 C. dried cranberries
1-1/2 C. sweetened flaked dried coconut

Directions:
Directions:
Cream together the butter, sugar, vanilla and orange peel until light and crumbly.
Mix together the flour, baking powder and salt and add to butter mixture.
Stir to mix, then beat about 5 minutes.
Mix in cranberries and coconut.
Shape dough into 1-inch balls and place about 2" apart on a buttered baking sheet.
Bake at 350 degrees 8-11 minutes. A shorter baking time will give you chewier cookies. Let cookies cool in pan on rack for 5 minutes before removing to rack to cool completely.
