I – 2 heads cabbage

Filling:
3 c. rice
3 c. boiling water
2 tsp. salt
4 medium onions, chopped
2 lbs. ground pork
2 tbsp. salt
½ tsp. pepper
Dash cayenne
1 egg
tomato juice

Directions:
Directions:
Core cabbage. Place cored side down in large crock or stock pot and cover with salted water. Bring to a boil. Reduce heat, keeping at a low boil. Remove cabbage leaves as they separate from head.

Rinse rice to remove excess starch. Add to boiling water. Stir in salt, cook on low for 1 minute, cover, remove from heat. Let stand until all water is absorbed. Cool.
Cook onions in butter until lightly golden. Mix with rice. Add meat, seasonings and egg.
Remove fibrous veining from cabbage leaves with a knife. Fill cabbage leaves with rice/meat filling and roll, tucking in ends as you roll. Line a roasting pan with cabbage leaves that were not suitable for rolling, layer cabbage rolls in pan, salting after each layer. Cover with tomato juice. Cover cabbage rolls with more cabbage leaves or foil. Bake, covered, at 325ºF for 2-4 hours.
