2 lbs. sliced squash
1 stick butter
1 medium onion
1 large grated carrot
1 can cream of chicken soup
1/2 soup can of water
1/2 pint sour cream
3/4 to 1 cup grated cheddar cheese
1 (8oz) pkg. Pepperidge Farm stuffing mix
salt & pepper to taste

Step 1. Cook squash and onions together in water for about 7 minutes or until tender. Drain well.
Step 2. While squash is cooking, mix liquid ingredients. Pour soup, water and sour cream into a large bowl. Add salt, pepper, and carrot's.
Step 3. Get Pepperidge stuffing mix ready. melt butter and pour over stuffing mix, using a fork to fluff.
Step 4. Mix drained quash/onion mix with the liquid ingredients. Toss gently to coat evenly.
Step 5. place a layer of stuffing mix in the bottom of Pyrex dish. Layer squash mixture and repeat until all is used, ending with stuffing mixture

Bake 350º for 30 minutes. Five minutes before casserole gets done, add cheese to top of casserole.
