¼ cup olive oil
2 tablespoons lemon juice
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1 clove minced garlic
¼ teaspoons each salt and pepper
2 pounds pork tenderloins cut into 1-inch cubes
2 tomatoes quartered
2 onions cut in into 1-inch wedges
2 sweet green peppers cut into 1-inch pieces

In a shallow nonmetallic dish, combine olive oil, lemon juice, oregano, garlic, salt and pepper. Add pork, turning to coat well.
Refrigerate, covered, at least 1 hour or overnight, stirring occasionally.
With a slotted spoon remove port from marinade; reserve marinade for basting.
Thread pork onto 6 skewers alternately with tomatoes, onions, and green peppers.
Place skewers on an oiled BBQ grill 4 to 6 inches from hot coals or on a medium-high setting on gas BBQ. Grill 7 to 10 minutes turning frequently and basting with reserved marinade, until pork is no longer pink but is still juicy.
