3 lbs. collard greens. Leaves half lengthwise roll into cigar like shape.
2 tbsp. vegetable oil or olive oil

Directions:
Cut rolled collard greens crosswise into very thin slices (no wider than 1/8 in). Roll and slice remaining leaves the same.

Heat oil in a 12 in skillet over moderate high heat until hot but not smoking. Saute collards tossing with tongs until bright green (1 min) Season with salt and pepper to taste.
