2 pickling cucumbers, peeled, sliced very thin
16 oz sour cream
Juice of 1 fresh lemon
3 Tbsp fresh chive- cut finely
pinch of salt and pepper

Mix all ingredients and refrigerate for at least an hour before serving

This is best served cold, is great as a side salad, but may also be used as a dressing for salad, or a dip for fresh veggies, bread or chips
