1 1/3c boiling water
1c quick-cooking oats
1/2c butter or margarine, softened
1c sugar
1c packed light brown sugar
2 eggs
1 1/2c flour
1/2c cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
1c finely chopped, peeled apple

Directions:

1.) Pour boiling water over oats in medium bowl, let stand 15 minutes. Heat oven to 350º. Grease and flour 13x9 baking pan.
2.) Beat butter, sugar, brown sugar & eggs in large bowl until fluffy; stir in oat mixture. Stir together flour cocoa, baking powder, baking soda & cinnamon; add to butter mixture, mixing well. Stir in apple. Pour batter into prepared pan.
3.) Bake 30-35min or until wooden toothpick inserted in center comes out clean. Cool in pan on wire rack. Drizzle vanilla glaze over top in decorative design.

Vanilla Glaze
Combine 1c powdered sugar, 1 tbsp softened butter, 1-2 tbsp hot water & 1/2 tsp vanilla extract in a small bowl; beat with spoon or whisk until smooth and of desired consistency.
