1/2c butter @ room temp.
1c sugar
2 eggs
1 1/2c flour
1 tsp baking soda
1 tsp salt
1c mashed very ripe bananas
1/2c sour cream
1 tsp vanilla
1/2c nuts (optional)

Directions:
Directions:
Preheat oven to 350º
Cream butter, sugar & eggs. Sift dry ingredients and combine with butter mixture. Blend well. Add bananas, sour cream & vanilla; stir well. Stir in nuts.
Pour into well buttered loaf pan. Bake 1 hour (25min for muffins) Turn out onto rack to cool.
