4 large potatoes
1 stick of butter
1 large onion
salt & pepper to taste
1 pound Velveeta
Some sliced pickled jalapeño peppers (optional but recommended)

Directions:
Directions:
Slice potatoes about 1/2 inch thick or bite size chunks and layer onions on top in same size. Salt and pepper to taste. Add butter in chunks and cover with foil. Bake at 350º until potatoes are tender (about 30 min) then uncover and slice Velveeta over the top and add jalapeño pepper slices as desired. Return to oven until cheese is melted and starting to brown in places.

Of course you can make this as big as you like. It's great for picnics because a big pan serves a lot of people and it's good until it gets stone cold.
