Ingredients: 1 C. warm tap water 1 pkg. yeast 1 1/2 t. salt 1 1/2 T. sugar 1 1/2 T. olive oil 1 1/2 T. powdered milk (I use SACO Mix 'n Drink) 3 C. flour ( I use 2 3/4 cups of all purpose flour and 1/4 cup wheat gluten). You could probably also use bread flour that already has extra wheat gluten in it. If you want to use whole wheat flour only replace all purpose flour with 1/3 to 1/2 of the total flour.

Directions:Mix water and yeast in a bowl and let set for 5 minutes. Stir in remaining ingredients. If you have a dough hook on a mixer I just mix for about 2 minutes or until a smooth ball of dough is produced. I take out the dough and spray the bowl with cooking spray then place the dough back in the bowl. Cover with a towel and let rise in a warm place until double in size. (about 1 hour) Punch down and use as pizza crust, Stromboli crust, or for soft pretzels. Makes a pizza or Stromboli or you can make 1 1/2 batches to make two pizza or Stromboli's. For pizza or Stromboli you don't have to let it rise a second time, but with pretzels you do.
Stromboli - roll dough into big circle, 12-15" diameter. Sprinkle cooked meat and cheese and other desired toppings on to half of the dough. Fold other half of circle over and crimp edges together. Cut 3 slits in the top to let steam escape. Melt 1-2 T. of margarine and mix in 1/4-1/2 t. of garlic powder. Brush melted butter mixture on top of dough before it goes in the oven and again after baking 5 minutes. Bake at 350º for about 15-20 minutes total baking time or until crust is golden brown. Serve with ranch dressing or marinara sauce. |
