3 LB BEEF
3 LB PORK
1 LB BACON
1/2 C RED WINE VINEGAR
1 CLOVE GARLIC
4 T WORCESTERSHIRE
3-3 1/2 OZ SAUSAGE CASING
2 T SALT
1 TSP PEPPER
2 T CORIANDER
1/2 TSP THYME
1/2 TSP ALLSPICE
1/4 TSP CLOVES
1/2 TSP NUTMEG (grated)

Directions:
Directions:
Dice Bacon into 1" pieces

Cut Meats into 1-1 1/2" pieces.
Mix with all other ingredients

Fill the Sausage Casings until firm but not too tight w/Meat mixture.

Refrigerate for 24 hours before using.

Add 2 tsp of Fat for each lb of Meat to make sure it does not turn out too dry.
