1 C long grain rice
2 T oil
1 can stewed tomatoes
1 1/4 can of water
1 medium onion - cut into 6 pieces
2 T chili powder or to taste
1 tsp cumin
Salt and Pepper to taste

Directions:
Directions:
Heat oil in large frying pan. Add rice and cook until it starts to brown. Pour in can of tomatoes and water. Stir to combine. Add chili powder, cumin, salt, pepper and onion. Stir again. Cover, reduce heat to low, and cook till rice is tender.
