Two pounds (6 medium) Potatoes
Three Tablespoons butter or margarine
Three Tablespoons Flour
salt and pepper

2-1/2 cups milk
1/4 cup finely chopped onion (optional)
One Tablespoon butter or margarine

Directions:
Directions:
Heat oven to 350.
Wash and pare potatoes. Cut into thin slices to measure about four cups.
Melt three Tablespoons butter in saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and stir in milk. Return to heat and stir constantly until mixture boils. Continue cooking and stirring for about one minute.
In a greased two quart casserole, arrange potatoes in two layers, toppping each with half the onion and 1/3 of the white sauce. Top with remaining potatoes and sauce.
Dot with one Tablespoon butter.
Cover and bake for thirty minutes.
Uncover, and bake sixty to seventy minutes longer or until potatoes are tender.
Let stand five to ten minutes before serving.
