Ingredients: Crepe Ingredients Crepe filling 1 1/4 c flour 1 cup wild or brown rice 2 T sugar 1 cup chopped Broccoli pinch of salt 1 small onion chopped 3 eggs 1 cup shrimp chopped diced 1 1/2 c of milk 1 cup scallops chopped diced 2 T butter, melted salt, pepper, fresh parsley and basil 1/2 T lemon 1 cup shredded cheddar cheese !/2 T of rum or brandy Cream sauce ingredients: 2-3 T butter 2-3 T flour 1 C milk or light cream Salt and pepper to taste

Directions:Cook brown rice and set aside. Place all ingredients for crepe batter in a blender or mixer and beat well. Let batter stand 1 hour for more perfect crepes. (You will need a crepe pan or maker to cook these.) Chop broccoli and onion and saute. Dice Seafood and grate cheese. Blend the rice with the broccoli and onions. Add seasonings. Next add seafood to a low flame and continually mix until all seafood is done. Add cheese and blend till melted. Start your Cream Sauce while you are finishing your crepe filling. Start making your crepes (you can make crepe pancakes ahead as well and keep them between paper towels.) Now for building your crepes. Fill and choose a classic roll or pocket fold to hold your filling. Add your cream sauce on top of your crepes with sprig of parsley. Serve. |
