"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1/2 lb. extra lean ground beef
1/4 c. minced onion
1/4 c. thinly sliced Chinese cabbage
1/2 tsp. soy sauce
1 tsp. corn starch
1/2 tsp. salt
1/2 pkg. wonton skin
Vegetable Oil (for frying)

Directions:
Directions:
Combine ingredients well. Place 1 tbsp. of mixture on center of a wonton skin. Moisten edges with water and fold diagonally, forming a triangle. Pinch along the edges to make sure wonton will not open when cooking. Repeat until rest of mixture is used.

Preheat oil to 350º. This is an ideal temperature for frying. A lower temperature will cause the wonton to soak up too much oil before it is cooked and a higher temperature will cook the outside too fast and possibly burn them. Carefully drop wontons in oil and cook until golden brown (about 5 minutes).

Remove from oil and drain on paper towels. Serve warm with soy or your favorite sauce.

Makes 20-30 wontons.
