2 c. fresh chopped spinach
1 c. shredded carrot
2 stalks green onion, thinly sliced diagonally
2 hard-cooked eggs, sliced
2 (about 3/4 lb.) Golden Delicious apples, chopped
Apple Salad Dressing:
1/4 c. cider vinegar
1/4 c. olive oil
1/4 c. packed brown sugar
1 small clove of garlic, minced

Directions:
Directions:
Combine salad dressing ingredients, pour over combined salad ingredients, toss.
Other good apple choices are Red Delicious, Winesap, Newtown Pippin, or Granny Smith (my favorite).

I make the dressing first, and drop the apple chunks right into it as I cut up the apples, to prevent their discoloration.
