1 c. sugar
2 tbsp. butter
1 egg
3 c. diced apples
1/4 c. chopped nuts
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Directions:
Directions:
Combine the first 3 ingredients and the vanilla in main mixing bowl. Combine last 5 ingredients in a separate bowl. Add the dry ingredients alternately with the apples (which provide the moisture) to the main bowl, adding nuts last. Bake in a greased 8 in. or 9 in. square pan at 350º for 30-40 min. Or, double the recipe, use a 9 x 13 pan and bake for 30 min. Serve warm with vanilla ice cream.
