2 lbs all purpose white, yellow or red potatoes; peeled and cut in 1/2 inch dice
3 Tbsp apple cider vinegar
1 Tbsp canola oil
1/2 cup chopped celery
1/2 cup chopped red onion
2 hard boiled eggs, chopped
3/4 cup mayonnaise
2 Tbsp yellow mustard
4 Tbsp sweet pickle relish, drained
1/2 tsp salt
1/4 tsp black pepper

Directions:
Directions:
Place potatoes in saucepan and cover with cold water. Add 2 tsp salt and bring to a boil. Reduce heat and simmer until tender, about 10 minutes. Drain potatoes.

Place potatoes in a large bowl and sprinkle with the vinegar and oil. Cool.

Add celery, onions and eggs and gently mix.

In a separate bowl, combine mayonnaise, mustard, relish, salt and pepper. MIx well.

Pour mayonnaise dressing over potatoes and gently toss until incorporated.

Chill.
