Fat, Fat and, um, Fat!
Grate one good size wedge of Parmesan or a Parm/Reggiano combo cheese [fat #1]
Put one full stick of butter [no substitutions allowed - fat #2]
and
one cup of table cream [may be called coffee cream or light cream in some stores - fat #3]

Directions:
Directions:
Add all 3 ingredients to a saucepan and heat slowly at no greater than medium heat, stirring often.
Do Not Boil or the milk will curdle, the fat will separate and your sauce is ruined.

Serve with your favorite pasta. Fettuccine is recommended but I sometimes mix it up with a fun shape. Avoid Capellini or the tiny delicate pastas that can't hold up to the rich sauce.
I serve with a big salad or several veggie dishes and a good white wine.

I often keep the ingredients on hand at the house in case I get surprised and need to feed people on the fly. It's is the easiest yummy quick meal I know of. I made it for John on our 3rd date - see where that got me!
