3 T butter
1 onion chopped
2 lbs sea bass or other flaky fish like salmon
4 c. chicken broth
1 can coconut milk
16 oz. sliced mushrooms
2 c. (~10 oz.) frozen corn or other veggie
1/4 c. parsley chopped (fresh)
1/4 c. dill chopped (fresh)
fresh lemon juice
salt
pepper

Directions:
Directions:
Saute lightly fish and onion in butter for 5 min in large stock pot. Add broth, mushrooms, and corn and bring to a boil then simmer on med-low until fish is cooked (5-10 min). Can add coconut milk while simmering. Add fresh parsley and dill when have 5 min left to simmer. Add lemon juice, salt, and pepper to taste.

I love sea bass so much that when we were in Seattle, we bought one at a fresh market and brought it back with us in a cooler on the airplane! Thought you might enjoy a fish recipe since you have access to so much fresh fish over there!
