1 whole chicken
3 tsp salt
1 tsp paprika
1 tsp onion powder
1/2 tsp dried thyme
1 tsp Italian seasoning
1/2 tsp cayenne pepper (optional)
1/2 tsp black pepper
4 whole garlic cloves (or 1-2 tsp garlic powder)
1 yellow onion, quartered (optional)

Use a 6 qrt crockpot for a 5 lb bird. In a bowl, combine all dried spices. Rub spice mixture all over bird, inside and out. Place bird breast side down into crockpot. Optional: Stuff bird with garlic cloves and onion. Do not add water. Cover and cook on high for 4-5 hours or low for 8 hours (long time at low temp is best for tender meat). Or you can bake in oven at 225º for about 3 1/2 hours (use meat thermometer) or at 350º for about 1 1/2 hours.
