2 c pea beans
1/4 # salt pork
1 onion
1 tsp salt
1/2 c light molasses
1/2 tsp dry mustard
1 T sugar

Directions:
Place beans in kettle, cover with cold water. Let soak overnight. Drain beans, cover with fresh water. Bring to a boil. Reduce heat; simmer until skins burst. Drain beans; reserve stock. Scald pork. Cut one 1/4" slice from pork; place in 2 qt bean pot. Make 1" deep cuts at 1/2" intervals in rind of remaining pork. Place onion & beans in pot; bury port in beans, leaving rind exposed. Bring reserved stock to boiling point. Combine 1 c stock and remaining ingredients; pour over beans. Pour in enough additional stock to cover beans; cover bean pot. Bake at 300º for 6 - 7 hrs or until done, adding stock if needed. Uncover; bake for 1 hr longer or until rind is crisp.
