1/2 cup apple cider vinegar
1/4 cup sugar
salt and pepper to taste
1 (16-oz.) can white whole kernel corn
1 (16-oz.) can yellow whole kernel corn
1 (14-oz) can black beans (optional)
1 (2-oz.) jar chopped pimento
1 large green bell pepper, chopped
1 large sweet yellow or purple onion, chopped
1 large tomato, chopped
1 cucumber, chopped

Directions:
Directions:
For the dressing:
combine the vinegar, sugar, salt and pepper in a bowl and mix until the sugar dissolves.

For the salad:
Combine the corn, black beans, pimento, bell pepper, onion, tomato and cucumber in a large bowl and toss lightly to mix.
Add the dressing to the salad and toss to mix. Chill, covered, for several hours before serving. Serves 12.
