600g beef fillet or sirloin cut into 4 thick beef steaks
3 spring onions, thinly sliced
1 large red onion, thinly sliced
1 1/2 telegraph cucumbers, cut in small finger batons
2 tomatoes, diced
3/4 cup mint leaves
1/2 cup coriander leaves


Dressing
2 tbsp. lime or lemon juice
2 tbsp. fish sauce
1/2 tsp. minced red chilli
1 tsp. sugar
1/4 cup sweet Thai chilli sauce
finely grated rind of 1 lime or lemon
2 tbsp. tamarind concentrate
Optional: cooked noodles, bean sprouts, sliced red pepper

Grill or pan fry beef to medium rare. Cut into fine diagonal strips while hot. Mix through combined dressing ingredients. Allow to cool. When ready to serve, toss with other ingredients. Pile onto a serving platter. Serves 4.

Here`s a wonderful Thai beef salad that takes very little effort. If there`s no tamarind, substitute equal amounts of lime juice.
