1 1/2 - 2 cups barley
1 large onion
3 cloves garlic
4 stalks celery
1 can chicken or beef broth (optional)
lemon pepper (to taste)
salt & pepper (to taste)
beef Bovril (to taste)
2 lbs. ground meat (deer, moose, beef or a combination)
1/4 cup fresh parsley, chopped

Directions:
Directions:
In a large pot add approximately 10 cups water or beef stock. (Adding chicken or beef stock will increase the fat content as wild meat tends to be quite a bit leaner than beef).
Coarsely chop onions, garlic and celery. Add to water and simmer on medium heat. In a separate pot, slow cook barley and drain.
Break the ground meat into small chunks and add to the veggie stock. Simmer until meat is fully cooked. Stir in fresh parsley. Add barley last.
As the soup simmers after the barley is added, it will thicken. Add water as needed to keep it at the right consistency.
If making a beef stock for your soup, omit the can of chicken/beef stock, but you still may want to use a touch of Bovril.
Substitute or add veggies or noodles...or whatever other yummy things that come to mind!

BEEF STOCK
Simply, boil beef bones in a large pot on medium high for approximately 1 hour. Remove bones and strain.
