2 cups sugar
1 1/4 oil
4 eggs
2 cups flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
13 oz. can crushed pineapple
1/2 cups nuts
2 cups grated carrots - or substitute 2 junior size jars of baby food
Frosting:
1 lb. powdered sugar
1 stick butter - 1/2 cup
8 oz cream cheese
1 tsp. vanilla
more nuts to sprinkle on top

Directions:
Directions:
Combine sugar and oil, add eggs and mix thoroughly. Combine other ingredients. Put in a greased and floured 9x13 pan.
Bake for 1 hour at 350º.

I found this recipe in the Phoenix newspaper when we lived in Mesa. Made this cake for a picnic we had with the folks, Uncle Jerry, Aunt Kathleen, Aunt Jeanne and Uncle Ray. Uncle Jerry, a fantastic baker, told me this was the best Carrot Cake he had every had.
