½ cup brown sugar, packed
½ cup corn syrup
¼ cup butter, soft
1 large egg
1 tsp. vanilla
¼ tsp. salt
¾ cup raisins

Pastry
2 cups all-purpose flour
¾ tsp. salt
1 cup vegetable shortening (Crisco)

Directions:
Directions:
Preheat oven to 425ºF.
Combine flour and salt in a mixing bowl. Cut shortening into flour (I use a dinner fork) until well blended. Add 4-8 tbsp. water (I generally add a bit more so that the pastry is a bit sticky). Do not over mix or over handle as the pastry will bake tough. Turn out onto floured board and roll to 1/8 inch thick. Cut into 4” rounds. Place in muffin pans. Place raisins in each pastry cup.
In a medium bowl, combine brown sugar, corn syrup, butter, egg, vanilla and salt. Mix until smooth. Fill each shell to 2/3 full. Do not overfill!
Bake 15 minutes.
Makes 12 tarts.
