1 c. onion, chopped
1 1/2 T. butter or margarine
1 1/3 c. cubed ham
2 T. chopped canned green chiles
8 slices firm sandwich bread
1 1/2 c. sharp cheddar cheese, shredded
2 c. milk
4 eggs
1/2 tsp. salt, opt.
1/4 tsp. pepper
1/2 tsp. dried oregano leaves

Directions:
Directions:
Saute the onion in butter until softened. Stir in the ham and chiles. Slice crusts off of the bread, if desired. Cut pieces into halves. Place half slices in a buttered baking dish. Sprinkle with ham mixture and 1 1/4 c. cheese. Top with remaining bread. Beat together milk, eggs, salt, pepper and oregano. Pour evenly over bread. Sprinkle with remaining cheese. Cover and let stand 30 minutes or refrigerate overnight. Uncover and bake at 350ºF for 40-45 minutes until puffed and brown. Serve hot from the oven or at room temperature.

Cooked pork sausage or chorizo may be used in place of ham. For extra flavor and crunch, add 1 green pepper, seeded and cut into chunks.
