1 lb ham, cubed,raw or cooked 1 tbsp bacon fat
2 tbsp butter 2 tbsp flour
1 cup milk 6-8 medium potatoes, sliced thin
salt, to taste dash black pepper

Directions:
Directions:
Pan fry ham in fat until brown. Place in well buttered casserole. Melt butter, blend in flour, add milk and stir over direct heat until sauce boils and thickens. Add salt and pepper. Arrange sliced potatoes over ham, and pour hot sauce over them. Bake in a moderately slow oven at 325º until potatoes are tender, about 1 hour. Cover casserole for first half hour, them remove for the remaining time.
